August Coffee of the Month - Peru Fidel Huancas

We're very excited to share August's Coffee of the Month from Peru by farmer Fidel Huancas!

Fidel Huancas is a third generation farmer that oversees La Esperanza, a 1.5 hectare farm in northern Peru. La Esperanza, meaning ‘Hope’, is named in reference to Fidel’s desire to obtain special coffees and become one of the best producers in his region.

It is Fidel’s dedication, passion and attention to detail that has seen him make strides in coffee farming and, with his proud heritage, he is striving to improve in order to motivate other farmers around him. Farming solely Yellow Caturra, this variety has been chosen because of its high performance on the terroir, while characterising the north of Perú, giving really high cup scores and a good yield.

This lot is processed as a Natural, and Fidel, with the help of his parents, carefully picked the cherries. The cherries then go through a fermentation process according to the environment, temperature and weather conditions. After that, the drying process is completed on raised beds in the solar dryer within six to eight days, until the parchment reaches the desired moisture content.
