Peru Fidel Huancas

Farming solely Yellow Caturra, Fidel chose this variety due to its high performance on the terroir that captures the character the north of Peru, giving really high cup scores and good yield.

A natural lot, the cherries go through a fermentation process according to the environment, temperature and weather conditions. After that, the drying process is completed on raised beds in the solar dryer within six to eight days, until the parchment reaches the desired moisture content.
